White button mushroom with the scientific name Agaricus bisporus is a well-known mushroom that is included in people's diet due to its medicinal, therapeutic and nutritional properties.

 

Medicinal and nutritional properties of button mushroom:

 

Due to having various polysaccharide compounds, button mushrooms play an important role in removing viral, bacterial, and fungal contaminations and reducing the resistance of viruses, bacteria, and fungi against common antibiotics. White button mushroom extract has been introduced as a blood glucose reducer and is recommended in the diet of type 1 and type 2 diabetics.

 

Button mushroom has 85 to 95% water. This amount of water has increased the nutritional value of the mushroom. Button mushroom has protein, carbohydrates, fat, vitamin A, group B vitamins, vitamin C, vitamin D, vitamin E and vitamin K.
Familiarity with button mushroom anatomy:

The vegetative organs in the button mushroom include hyphae and mycelium. The string or tubular structures such as hyphae or thread are called mycelium as a result of join ing hyphae together. The reproductive organs in button mushrooms are their aerial part, which is called the mushroom, actually the part that is harvested as a product.

Cap refers to the part of the cap, such as the aerial part of the mushroom, and Stipe or Stalk refers to the base part of the mushroom on which the cap is placed.

The cap is covered by a membrane that is placed between the cap and the base, which is called Veil membrane.

As the fungus approaches maturity, the membrane breaks and the blades are visible under the cap, the blade is the place where the spores of the fungus are formed.

Fungi reproduce by producing and releasing spores. The spore is like a round that comes out from the back blades of the mushroom and by cultivating it on cooked wheat, they produce the mushroom seed during an operation.

After mushroom seed cultivation, the mycelium starts to grow and forms a mass and complex and consumes the growth substrate and the nutrients in it. In the normal state, the mycelium is established in the growth bed, which is called the running stage. At this stage, correct adjustment of environmental conditions such as temperature, humidity and CO2 is important for better growth of mycelium.

In this situation, with the change of environmental conditions, the mycelium enters a different phase, which is the sexual phase.
